Today's Recipe - Praline Sauce

Note: Because of the sugar content, this week's dessert sauces should be served only on special occasions.
1/4 cup butter
1 1/4 cups firmly packed brown sugar
3/4 cup light corn syrup
3 Tbsp all-purpose flour
1 1/2 cups chopped pecans, toasted
5 oz can evaporated milk
Melt butter in a medium saucepan; add brown sugar, corn syrup, and flour, stirring until smooth. Bring to a boil; reduce heat, and simmer 5 minutes, stirring constantly. Remove from heat and cool 20 minutes. Stir in pecans and evaporated milk. Cool completely. Cover and refrigerate up to 2 weeks. Serve warm over ice cream or plain cheesecake. Yield: 3 cups.
